Anchovies on Toast
Napier Quarter has made me addicted to anchovies on toast. Being a south sider, trekking over to Northside for some toast sometimes just won’t cut it for me. So, I started to make my own combos to make at home.
This recipe is so bloody easy, you will be the envy of tea room lunch time at work.
Ingredients
1 piece crusty sourdough bread
handful of flat leaf parsley, finely chopped
splash of olive oil
a few slices of red onion
3 good quality anchovies, I like to use mine from Pete & Rosie’s Deli in the Prahran Market
Method
Toast your bread. Meanwhile, add parsley to a small bowl and add a splash of olive oil. Mix until well combined,
Once toast it cooked, slice into 3, smear parsley mixture on top of each portion and then top with anchovies and red onion slices. Drizzle with a little more olive oil and finish with cracked pepper.
